Jacques Bally set up this distillery in 1917 on the Tivoli estate at Le Carbet, on Martinique's Caribbean coast. It is best known for its ambered and aged rhums and for the gentle, round style of its whites. The estate sits close to Neisson, its neighbour in the same commune. It works with a Creole column fed by cane juice from estate fields and local growers. I could not confirm the current owner from any source I could open, so treat that field with caution.
