St Nicholas Abbey is a Jacobean plantation house in Saint Peter, with the estate dated to 1658. The Warren family restored it and began distilling on site in 2006 on a small pot still, using cane grown on the estate. Cane juice rather than molasses gives a lighter, grassy base, and the rum is aged in ex-bourbon casks. The distillery is open for tours and shipments of the house rum are modest.
