Flor de Cana is made at the San Antonio sugar estate near Chichigalpa, at the foot of the San Cristobal volcano in the department of Chinandega. The distillery is dated to 1890 and has stayed in the hands of the Pellas family. Molasses from the estate's own and neighbouring cane is fermented and distilled in column stills, and the rum is aged on site in used bourbon barrels. The house style is lighter and drier than most Caribbean rums, and the age statements on the labels count the youngest rum in each blend.
